Assuming you actually like the girl, the perfect place for a first date is at a baseball game. probably difficult to do in Sydney, but there's usually lot of interesting things to see, do, and eat around the ball park. During the game, the girl is more than likely clueless about the game so then it gives you guys more chance to talk and get to know each other.

More late night activity in city then a club in the cross then depending on how tired she gets it could be an all nighter.

If I may chip in and with due respect, whole day as first date is not a great idea. I assume you don't know each other very much and she is not s WL/ML. I think you are opening the book way too early and let her go through all pages one by one. Keep it short and yet memorable, make her want to spend more time with you. First date should work like an Ad for what she can get if she buys the goods.Spending whole day is like giving an unwrapped gift. No excitement.

That's my take on First date mate. The end of the story do whatever makes you happy.

As for places to go, depends where you live. Organica at Concord is a nice cafe with decent food and one of the best coffees I tried. Start there and then go for a walk to beautiful waterfront walk at Breakfast Point.
