Bro OP, it's probably your phone that she's tracking, not your car. It's a lot easier to track your phone because it's already got all the hardware on it to be tracked. Plus it's more "comprehensive" because you go everywhere with your phone but not necessarily with your car. There are heaps of apps and websites that offer this service.
One exception is maybe if you drive a Tesla. You can easily track your Tesla using the app.
That said, I don't think knowing how she's tracking you is going to help. All the best, bro!

I could be a small tracker like an AirTag or even small devices such as headphones that have tracking in them.
You will need to figure out how she does it first. If you are using apps like find my phone, family sharing etc you might want to start with these.
The reality is, if she is already tracking you she is suspicious and you have upset her. I’d say take a break and/or leave the phone in the office/home, take public transport etc

Google it. Finding a GPS tracker isn’t difficult. There are tracker detectors you can buy.
If you have money, most private detectives can find it for you, for around $500. They have the detector equipment.
Never, ever park your car near a massage shop. Always park 10 minutes walk. Or go to places near shopping centres.
Drive to her best friends place. Park the car out front and catch an uber from there to go for a punt. That will teach her a lesson
