Before the lockdowns I would go over to my mistress house but now it's almost impossible because our SOs are home all of the time.

Having said that definitely understand the dilemma. Going cashless means everything is viewable on our bank statements and working from home means any time out is very much noticed !

Some brothels rent out rooms, eg. 42g, but OP said he didn’t want anything dodgy. Going to a brothel with your mistress in tow even if it were only to use their rooms would probably freak her out!
The way I see it, your biggest problem is the credit card. If you can solve that, the world is your oyster. You can try to get a credit card that has no paper trail, ie. everything sent you by email.
Or if you don’t want even statements in your email, you can get a prepaid card and load it up enough so you can book hotel rooms with it. It’s as good as cash, zero SO-traceability, and more accessible than cash in this day and age.

I've managed to book a few decent hotels in the city in the past by just calling them up, asking if they had rooms available and then showing up with cash in hand at the front desk. Sometimes they will take a swipe of a credit card for security but don't actually charge it so I just use the work card for this and pray I don't break the bed! I've also found a few who will hold onto more cash as a security deposit and return it to you at the end, this is best as there is no paper trail anywhere!
Get a different credit card with a lower limit, and get paperfree staements. Find a good place to stash the card
Once I used to park the car somewhere quiet and had it out in the car. But eventually the affair was too big a risk and price to pay for a near "perfect and happy" marriage. Hence I took up punting. No obligation, no string and no tie. And best of all no parking problem.
That’s why I said load it up. Put enough in there to cover the deposit.
Heck even if you don’t do that, just use your regular credit card for the deposit, but you can use the prepaid to pay for the room. I’m assuming you won’t go trashing the place up. The deposit will just come and go, it won’t show up in your credit card statements… no trace at all.
Most pubs that call themselves a hotel actually do have accommodation. Not sure if there are any in the CBD but pretty sure you'd find some as close as Newtown. In some cases they're actually pretty good - much better than accommodation you'd find out in the country at any rate.

Car rental companies hold on to your card details and you can find mysterious charges appearing on your account days/weeks after you've given the car back. Hotels can theoretically do the same thing.
I've used Dayuse at least half a dozen times now. Each time I've paid cash and 3 or 4 of the hotels have allowed me to leave a cash security deposit at check-in. Never had an issue and no paper trail.
I use dayuse.com. Plenty accept cash but do require a CC swipe (which disappears from your account) plus you need to show ID. works fine.
