You don't need to add the numbers to your contacts.
Just open your WeChat app, go to the contacts tab, choose 'New Friends', and search for the shop's phone number in the search window at the top of the page. If the other user/shop is allowing to be found via phone number (in privacy settings), it will then show in the search results, and you can then send an 'add request'.
