Interesting business concept. Not sure if it’s the right fit for guys on this forum but would suit introverted guys with no social skills or experience with girls. Hope the girls don’t get put into an unsafe situation though….
currently 1 hour is the minimum, but I've found that sometimes the girl is reluctant to take an hour booking cuz they take public transport, so might have to reconsider this
different reasons:
most girls who applied are looking for jobs. they've got a job elsewhere, or about to have one, but want to earn extra during free time.

I'm still trying out the business model, so far I ran into many issues:
- Lots of texting to match schedule for the man and the girl, arranging meetup location
- The girl schedule changes. Even if she says she's available, say Monday after 3pm, she's not always available anytime after 3pm Monday.
- Parking issue: when the guy arrives, parking can be an issue, thus he arrived a bit late
- Paying cash in the public was weird. I also had to go to a nearby ATM to prepare change in case.
- If cash is paid short, it was weird to ask in the public too.
- I had to personally be there to meet the guy, then introduce the girl to the guy, collect cash, pay the girl. Highly inefficient and not worth the time and the commission fee (client pays $90/hour, the girl keeps $50/hour)
- Last-minute cancellation issues, eg the girl has period, the guy got busy which the other party wasted time travelling. Luckily this happened before one had hopped onto the train/bus.
- Even if sex is possible, I have no room for them to do it yet

but I'm sure the girl would exchange contacts if she likes the guy enough and wants to do deals with him. This is the same for any WL ML though, can't stop it

You will need to take yourself out of the equation and keep it as a website similar to a seeking.com because you will have no time if you end up with say 100 girls and 100 men making weekly bookings!

As for room to do the deed, you can consider renting a house or apartment in the city (start with an AitBnB) and use it as a “love hotel” like in Japan.
It would be an additional cost, charged by the hour.
In the end, all these ideas become boy-met-girl-go-fuck, so the key aspect will be two price points:

The big point in all this is how your new business will differentiate itself from seeking.com

agree, it's not sustainable to keep being the middleman arranging meetings. I don't mind hand-connecting the guy & the girl at the beginning. that's how Airbnb and many businesses got started. the founder needs to be there to hold hands and connect customers and users to see the problems and get feedback.
so far, I got to meet the girls, kind of fun as a punter myself but lots of time-consuming tasks. something to think about.
