The old phone I use for punting has died and refuses to charge.
Instead of getting a new phone for this, is there an online service where I can send and receive SMS's that is reasonable? Preferably based on credits as I don't use it much. Maybe once every few months.
I still have the SIM so might be able to use that number?
Or do I have to get another phone for this?

It's also more discrete if can be done from the same phone but online via a website or app.
Or is there a tool like Whatsapp\Telegram\Line that allows you to hide your real number or use a different one?

There would be some online sms services, I have used Airdroid but needs a phone to scan QR code for easy log in. You could buy a cheap phone under $100

$5 aldisim good for 12 months.
Assuming you have a dual SIM phone,Stick it in the 2nd slot of your phone. or
get an eSim and deactivate/reactivate it when you are making your nefarious traffic

Was using asdimobile on the phone that died, great plan. Checked if they support eSim and the website said no.
Anyone else with a PAYG plan offer eSim?

You could (hypothetically of course) purchase the Aldisim and use it to register whatsapp, zalo, wechat accounts. Limits you to just shops that support those apps.
For the price maybe you just need to insert/pullout the aldisim when you are making bookings.
Another nice thing about Aldi, can buy the SIM for cash and thy have never snail mailed me. their only communication comes to my punting email address

Don't you need to provide ID to activate? Or have the rules changed? Been a while since I sparked up a new number.

Yes, you give your licence. if that fails you give a valid credit card.
The cash purchase means it may not appear on people's card statements if that is a concern.
I would not advocate for breaking telecommunication laws.
