429a Pitt St says they are but I have no clue what the talent is that early in the morning.
Body and Soul on George St down towards Haymarket. I've been there at like 4AM so I'm pretty sure as long as they wake up from ringing the buzzer it'll be fine. Talent is a genuine coin flip between not great and bad at the best of times here though.

I think there are some around the corner of Goulburn & George, towards the cinema, but unsure if they are actually 24 hour.
