How many times do you have to "release" to keep you hormones in control. 1-2 per week?

Depends. I might have 4 or 5 fucks and/or wanks in a day and I might go up to 5 days without fucking or wanking.
It depends on the mood, opportunities that arise, etc, and sometimes a deliberate effort to abstain for a few days.
If I have gone for 5 days without coming, I will definitely end the fast with a fuck - you don't want to waste that amount of pent up energy on a wank!
