There are some decent buffets in Chinatown if that's your thing. All are pretty decent
I don’t mind fat thaiger but they charge $6.9 for a can of drink lol
Gumshara for sure, my favourite place to eat anytime I go to Haymarket, although one Japanese lady from Ginza didn't rate it, which shocked me as a pasty white guy.

Nanjing Dumpling if you like soup dumplings. Chicken V for korean fried chicken/beer/liquor. Kingsway for malatang. Gumshara is very good ramen but there's also an Ippudo in world square now as another option. And there are about 3 or 4 nearly identical chinese noodle places at 8 Quay St that are all quite good if you like outdoor seating. Dopa has a decent japanese curry that I get from time to time.
Avoid getting a pub feed, the pubs in the area aren't too good on food imho. Otherwise you're golden. Tons of great stuff in Haymarket. Have fun
In Japanese Gumshara means working really hard but has a connotation of not thinking about why you are working, maybe working your arse off without engaging your brain.
Went there once and really thing stodgy soup, overly starched, lacking finesse. Kind of thought the name matched the food. Trying really hard but without any thought of what they were producing.
Just my opinion but no Japanese person I know has ever really rates it so that chick from Ginza seems to match the dozens of Japanese I know that say the same thing.
If we have a conversation of where is good then you’ll get dozens of different opinions but nobody I know has ever really rated that place

It's because Gumshara is catered to the Australian palate - strong, bold flavours, fuckloads of fat/collagen, not much nuance.
Japanese people are more used to what we'd think of as plain ramen - simple shoyu/shio broth, even miso and tonkotsu broths made in Japan would be seen as light here.

I can never understand why people like this place. Their pork bone "broth" (if you can even call it that) is like gelatine. It's not even liquid enough to be called a soup. Eating it is like eating pure fat. Never seen any ramen place make their broth like that and I've been to Japan many times.
I thought the full fat broth at Ryotei in Crows Nest was bad, never thought I'd find an even worse one than that.

Good ramen places are unfortunately rare in Sydney. Hate to say it but Ippudo probably still the most consistent. Not the best soup and meat but they win on noodle quality. Ramen Zundo has better soup and meat IMO, but noodle texture loses out to Ippudo. To me, the noodles are the most important so I prefer Ippudo.
None of them can hold a candle to Ichiran though. The absolute best ramen I've ever tasted in my life. Why oh why does nobody franchise a branch here?
I ended trying gumshara, it was an awesome experience at the very least. Understand it’s not everyone’s cup of tea, the jap ML i spoke to said it was ramen for men lol good shout thanks all
Ramen is overrated. I avoid it like the plague.
