2 possible reasons why they did this.

1. Eva was double booked and they thought they could still squeeze money from you knowing that you never seen her before.

2. Eva called in sick or left early for the day and since you booked ahead already. They didn't want to miss out on a pre-secured business transaction. They called the back up MooMoo to take her place and again since you never seen Eva, they thought they would get away with it.
