It's a busy shop vary rarely they start on booked time for multiple reasons.
If she wasted 15 with showers and slow prep, that would be different and a definite markdown.
Could also be not the fault of the girl ie customer ignoring the buzzer or intentionally staying past the buzzer OP might of just been unlucky to be hit with the delay
